1 cup vegetable oil
4 eggs
2 cups sugar
2 cups canned pumpkin
1 tsp baking soda
1/2 tsp salt
2 tsp baking powder
2 tsp cinnamon
2 cup flour
Frosting
3 oz cream cheese, softened
6 tbls margarine, softened
1 tsp milk or water
1 tsp vanilla
2 cups powdered sugar
Preheat oven to 350F. In a large mixing bowl, cream oil, eggs and sugar. Add remaining cookie ingredients and mix well. Pour batter into an ungreased 15 x 10-inch jelly roll pan. Bake at 350F for 20 to 25 minutes.
Cool completely and frost with cream cheese frosting. To make frosting, cream together all the frosting ingredients. Spread on cooled, uncut cookies. After frosting has set, cut into equal size bars. Store any leftover bars, covered, in the refrigerator. Variation: Add 1/2 cup chopped walnuts or raisins to the recipe. Yield: 36 pieces.

Let it sit in a warm place for 1 hour. Reheat to just below boiling before serving. *****************************
| Recipe 4 Hot Spiced Cider 8 cups of apple cider or apple juice In a large saucepan combine the apple cider or juice and brown sugar. For spice bag, place cinnamon, allspice, and the 1 teaspoon of whole cloves in a double thickness of cheesecloth. Bring up corners of cheesecloth and tie with string. Add spice bag to cider mixture. Bring to boiling, reduce the heat. Cover and simmer at least 10 minutes. Always heat your apple cider before drinking. Unpasteurized apple cider might contain harmful bacteria. Use pasteurized cider when serving to young children or the elderly. If you do use unpasteurized cider, heat it to 160F or boiling. Serve it warm or let it get cold in the fridge.
