                 Yummy Pumpkin Bars

Bars

1 cup vegetable oil
4 eggs
2 cups sugar
2 cups canned pumpkin
1 tsp baking soda
1/2 tsp salt
2 tsp baking powder
2 tsp cinnamon
2 cup flour

Frosting

3 oz cream cheese, softened
6 tbls margarine, softened
1 tsp milk or water
1 tsp vanilla
2 cups powdered sugar

Preheat oven to 350F. In a large mixing bowl, cream oil, eggs and sugar. Add remaining cookie ingredients and mix well. Pour batter into an ungreased 15 x 10-inch jelly roll pan. Bake at 350F for 20 to 25 minutes.

Cool completely and frost with cream cheese frosting. To make frosting, cream together all the frosting ingredients. Spread on cooled, uncut cookies. After frosting has set, cut into equal size bars. Store any leftover bars, covered, in the refrigerator. Variation: Add 1/2 cup chopped walnuts or raisins to the recipe. Yield: 36 pieces.

 

 

            

                     Spiced Cider Recipes

Recipe 1 

Hot Spiced Cider
Ingredients

 

6 cups fresh apple cider

1/4 cup pure maple syrup (more or less, to taste)

2 cinnamon sticks

6 whole cloves

6 whole allspice berries

6 strips orange peel

6 strips lemon peel


Directions

Pour the apple cider and maple syrup into a large stainless steel saucepan. Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.

Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.

Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving, if you like.

Recipe 2 

Hot Spiced Apple Cider

1 (1 gallon) bottle apple cider

1 cup frozen orange juice concentrate (this ingredient is a must)

2 teaspoons cinnamon

2 teaspoons nutmeg

2 teaspoons ginger

2 teaspoons whole cloves or ground cloves

1 cup cranberry juice cocktail (or less)

10-12 servings

1 hour 15 minutes

30 min. prep

Recipe 3 

Spiced Cider

2 quarts apple cider

¼ cup packed brown sugar

½ teaspoon whole allspice

1 teaspoon whole cloves

1 cinnamon stick

¼ teaspoon salt

1 pinch ground nutmeg

1 orange, quartered with peel

Place all ingredients in a large pan and bring to a boil for 5 minutes. Let it sit in a warm place for 1 hour. Reheat to just below boiling before serving.

Recipe 4

Hot Spiced Cider

8 cups of apple cider or apple juice
1/4 to 1/2 cup of packed brown sugar
6 inches stick of cinnamon
1 teaspoon of whole allspice
1 teaspoon of whole cloves
8 thin orange wedges or slices, optional
8 whole cloves, optional

In a large saucepan combine the apple cider or juice and brown sugar. For spice bag, place cinnamon, allspice, and the 1 teaspoon of whole cloves in a double thickness of cheesecloth. Bring up corners of cheesecloth and tie with string. Add spice bag to cider mixture. Bring to boiling, reduce the heat. Cover and simmer at least 10 minutes. Meanwhile, stud orange wedges or slices with cloves, if desired. remove and discard spice bag. serve cider in mugs with studded orange wedges or slices, if desired.
Makes eight 8 ounce servings

Recipe 5

Hot Spiced Cider

4 cinnamon sticks, broken into pieces
2 nutmegs, broken
1 teaspoon of whole cloves
1 teaspoon of allspice (whole)
3 quarts of cider

Wrap first 4 ingredients in cheesecloth and tie in a bundle. Simmer in crock pot 3 quarts of cider with spices 6-8 hours.

Recipe 6

Hot Spiced Cider

1 quart of apple cider or apple juice
1 cinnamon stick cracked in half
10 whole cloves
4 whole allspice
1 lemon sliced
1 orange sliced
(Additional orange slices and cinnamon sticks for garnish if desired)

Pour cider into a 2 quart saucepan. Put cinnamon stick pieces, cloves and allspice together in a piece of clean cheesecloth and tie together. Add spice bag and fruit slices to cider and simmer gently for 10-15 minutes. Reduce heat. Serve hot with cinnamon stick and/or lemon slice.

Recipe 7

Spiced Hot Cider

1 gallon of cider
2 teaspoon of whole allspice
2 teaspoon of whole cloves
2 sticks of cinnamon
2/3 cup of sugar

Combine ingredients in large saucepan. Heat to boiling. Reduce heat, cover and simmer 20 minutes. Strain. May be kept warm or reheated.

 

 

 

 

 

Always heat your apple cider before drinking. Unpasteurized apple cider might contain harmful bacteria. Use pasteurized cider when serving to young children or the elderly. If you do use unpasteurized cider, heat it to 160F or boiling. Serve it warm or let it get cold in the fridge.
